Altari mu (whole radish), a local radish which grows only in Korea soil, has strong flesh and a pungent taste much stronger than common radish.
So, when it is pickled into kimchi with generously using sugar and glutinous rice paste, it can be enjoyed very tastefully.
Originally chonggak kimchi was made without cutting radishes, but nowadays people like to eat whole radish cut into four or into half-moon shape with its stems.
